# Ingredients:

→ Main Ingredients

01 - 1 tablespoon olive oil
02 - 1/4 cup beef broth
03 - 1/2 teaspoon dried rosemary
04 - 1/2 teaspoon dried thyme
05 - 1/2 teaspoon salt (adjust as needed)
06 - 1/4 teaspoon black pepper
07 - 1 teaspoon onion powder
08 - 1 teaspoon smoked paprika
09 - 3 cloves garlic, chopped finely
10 - 4 tablespoons melted unsalted butter
11 - 1 pound baby potatoes, cut in half
12 - 1 1/2 pounds beef stew meat, chopped into cubes

# Instructions:

01 - Warm up olive oil in a pan over medium-high heat. Cook beef pieces on all sides until browned—2-3 minutes per side. Move to the slow cooker.
02 - Place the halved potatoes into the slow cooker.
03 - Combine butter, minced garlic, smoked paprika, onion powder, thyme, rosemary, salt, and pepper in a bowl. Pour this mixture on top of the beef and potatoes.
04 - Drizzle the beef broth into the slow cooker.
05 - Cook with the lid on—low setting for 6-8 hours or high for 3-4 hours—until meat is tender and potatoes are soft.
06 - Dish it up while warm. Sprinkle with chopped parsley as a garnish, if you'd like.

# Notes:

01 - For added creaminess, stir in heavy cream 30 minutes before serving.
02 - You can swap out baby potatoes for sweet potatoes or carrots.
03 - Feel free to skip browning the beef if you're in a rush.
