Turkey Meatballs with Sauce (Print Version)

01 - 1/4 cup beef broth
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon rosemary, dried
04 - 3 garlic cloves, finely chopped
05 - 1 teaspoon onion powder
06 - 1 1/2 pounds stew beef, cut small
07 - 1/2 teaspoon thyme, dried
08 - 1/2 teaspoon salt, or as needed
09 - 1/4 teaspoon black pepper
10 - 1 pound baby potatoes, cut in half
11 - 4 tablespoons of melted unsalted butter
12 - 1 teaspoon smoked paprika

# Instructions:

01 - Warm up some olive oil in a skillet over medium-high. Sear the beef chunks till golden on the outside, flipping after 2-3 minutes. Move to the slow cooker afterward.
02 - Toss the cut-up baby potatoes into the slow cooker.
03 - Stir the melted butter, garlic, smoked paprika, onion powder, rosemary, thyme, salt, and black pepper in a small dish. Drizzle the mixture over your beef and potatoes.
04 - Pour the beef broth right into the slow cooker.
05 - Put the lid on. Let it go slow for 6-8 hours on the low setting or speed things up on high for 3-4 hours till the beef is soft and the potatoes are good to eat.
06 - Dish it out while it’s warm. Sprinkle fresh parsley on top if you’d like.

# Notes:

01 - Mix in heavy cream during the last half-hour to make it richer.
02 - Swap out baby potatoes for sweet potatoes or carrots if you want a change.
03 - If time’s tight, you can skip searing the beef.
