# Ingredients:

01 - 1 stick of butter, softened.
02 - Half a cup of white sugar.
03 - Half a cup of packed brown sugar.
04 - One large egg.
05 - 1 teaspoon of vanilla.
06 - 1 1/2 cups of regular flour.
07 - Quarter cup cocoa powder.
08 - One teaspoon of baking soda.
09 - Half a teaspoon of salt.
10 - 2 tablespoons espresso powder.
11 - 1 tablespoon of hot water.
12 - 1 cup cold mascarpone cheese.
13 - 1/2 cup of chilled heavy cream.
14 - 1/4 cup of powdered sugar, sifted.
15 - Some unsweetened cocoa for dusting.

# Instructions:

01 - Preheat the oven to 350°F and get two baking sheets ready with parchment paper.
02 - Beat together the butter and sugars until it turns fluffy. Stir in the egg, vanilla, and coffee mix.
03 - In a separate bowl, mix together the flour, cocoa, salt, and baking soda. Pour the dry ingredients into the wet and stir until combined.
04 - Roll the dough into balls, press them lightly, and place onto the baking sheets.
05 - Bake for about 8-10 minutes or until the edges are firm. Let them cool down fully.
06 - Whisk the mascarpone, cream, powdered sugar, and vanilla together until you get stiff peaks.
07 - Spread some filling between cookies, add any extra topping, and sprinkle with cocoa.
