In a pot over medium heat, combine butter with the brown sugar substitute.

Keep whisking until everything blends and the sugar dissolves.

Take the pot off the stove and mix in the vanilla.

Drop the walnuts in and stir well so they're coated.

Spread the mixture on a baking sheet lined with parchment and leave it to harden for 30 minutes.
