In a big bowl, gently blend the beef, chopped spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and seasoning until mixed through. It's okay if it's not perfectly even.

Scoop 1-2 spoonfuls of the meat mix, flatten it in your hand, pop a mozzarella cube in the center, and wrap it up so the cheese is fully covered. Roll into a ball.

Warm olive oil in a pan over medium. Fry meatballs a few at a time, for around 4-5 minutes per side, until they're golden and cooked through.

Put the meatballs onto a plate layered with paper towels to soak up any extra oil.
