Cheesy Spinach Garlic Meatballs (Print Version)

01 - 2 tbsp olive oil (for frying)
02 - 1 cup fresh spinach, minced finely
03 - 1/4 tsp ground black pepper
04 - 1 lb ground beef (80% lean preferred)
05 - 1 large egg, beaten
06 - 3 garlic cloves, finely chopped
07 - 1/4 cup plain breadcrumbs
08 - 1/4 cup Parmesan, grated
09 - 1 cup mozzarella, diced into tiny cubes
10 - 1/2 tsp Italian herb blend
11 - 1/2 tsp salt

# Instructions:

01 - In a big bowl, gently blend the beef, chopped spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and seasoning until mixed through. It's okay if it's not perfectly even.
02 - Scoop 1-2 spoonfuls of the meat mix, flatten it in your hand, pop a mozzarella cube in the center, and wrap it up so the cheese is fully covered. Roll into a ball.
03 - Warm olive oil in a pan over medium. Fry meatballs a few at a time, for around 4-5 minutes per side, until they're golden and cooked through.
04 - Put the meatballs onto a plate layered with paper towels to soak up any extra oil.

02 - Handle the mix lightly, don't overdo it
03 - Cover the cheese fully to stop leaks
04 - Fry a few at a time for even cooking
