Rinse the strawberries under water, dry them gently, and remove the stems. Scoop out the insides a bit, but make sure the bottoms stay whole.

Whip the cream cheese until creamy. Add in the powdered sugar and vanilla, and keep mixing until it's light and fluffy.

Using a small spoon or piping bag, stuff the strawberries with the cheesecake mix so it slightly spills over the top.

Dust graham cracker crumbs on top. If you'd like, sprinkle with nuts, drizzle melted chocolate, or add some sprinkles.

Pop them in the fridge for at least half an hour to firm up the filling before eating.
