Spicy Bacon Jalapeño Bites (Print Version)

# Ingredients:

01 - 8 oz cream cheese, brought to room temperature
02 - 1 cup cheddar cheese, shredded
03 - 2 green onions, diced small
04 - 8 big jalapeños, halved lengthwise with the seeds scooped out
05 - 1 teaspoon smoked paprika
06 - 1 teaspoon garlic powder

07 - 16 pieces of bacon

→ Optional Topping

08 - 2 tablespoons chopped parsley

# Instructions:

01 - Turn the oven on and set it to 400°F (200°C). Line a baking tray with foil or parchment so cleanup's easy later.
02 - In a bowl, mix the softened cream cheese with the shredded cheddar, diced green onions, garlic powder, and smoked paprika. Stir until smooth.
03 - Carefully pack the cheese mix into each jalapeño half. Make sure it's filled evenly and press it down lightly to keep it secure.
04 - Take one slice of bacon and wrap it tightly around each stuffed jalapeño. Use toothpicks to keep it in place if needed.
05 - Lay the wrapped peppers on the lined baking tray with some space between them so they cook evenly.
06 - Pop them into the oven and bake for about 20-25 minutes, or until the bacon is crispy and the cheese is bubbling.
07 - Take them out of the oven and let them rest for a few minutes. If you want, sprinkle the chopped parsley on top right before serving.

# Notes:

01 - If you want to cut down on the heat, remove all the seeds and pale membranes from the jalapeños carefully.
02 - For a sweeter touch, brush on some honey or sprinkle brown sugar over the bacon before the last few minutes of baking.
