Turn the oven on and set it to 400°F (200°C). Line a baking tray with foil or parchment so cleanup's easy later.

In a bowl, mix the softened cream cheese with the shredded cheddar, diced green onions, garlic powder, and smoked paprika. Stir until smooth.

Carefully pack the cheese mix into each jalapeño half. Make sure it's filled evenly and press it down lightly to keep it secure.

Take one slice of bacon and wrap it tightly around each stuffed jalapeño. Use toothpicks to keep it in place if needed.

Lay the wrapped peppers on the lined baking tray with some space between them so they cook evenly.

Pop them into the oven and bake for about 20-25 minutes, or until the bacon is crispy and the cheese is bubbling.

Take them out of the oven and let them rest for a few minutes. If you want, sprinkle the chopped parsley on top right before serving.
