Chicken Sweet Potato Meal (Print Version)

# Ingredients:

01 - 2 medium sweet potatoes, chopped into 1-inch cubes.
02 - 1 teaspoon ground cumin.
03 - 1 tablespoon lemon juice (optional).
04 - 1 medium onion, finely chopped.
05 - 1/4 teaspoon chili flakes for a spicy kick.
06 - 1 teaspoon salt for seasoning.
07 - 1/2 teaspoon black pepper.
08 - 2 tablespoons olive oil for cooking.
09 - 1 teaspoon fresh thyme or rosemary, your choice.
10 - 1 pound of chicken thighs or 2 breasts.
11 - 3 cloves garlic, finely minced.
12 - 1 teaspoon paprika for flavor.

# Instructions:

01 - Dry off chicken, then sprinkle with salt, cumin, paprika, and pepper.
02 - Brown the chicken for 4-5 minutes on each side until nicely golden. Take it out of the skillet.
03 - Toss sweet potatoes into the skillet and cook for 7-10 minutes until they start to brown. Mix in garlic and onions for about 2 minutes.
04 - Pop the chicken back into the skillet. Add herbs, cover it up, and cook for 5-7 minutes so the chicken hits 165°F.

# Notes:

01 - Keep your sweet potato pieces the same size so they cook evenly.
02 - You can pick between chicken thighs or breasts.
03 - Lemon juice gives a nice brightness but is totally optional.
