Rocky Road Cookies (Print Version)

# Ingredients:

01 - 1 cup cubed, chilled butter.
02 - 1/2 cup granulated sugar.
03 - 1 cup dark brown sugar.
04 - Two eggs, large in size.
05 - 1 teaspoon pure vanilla.
06 - Half a cup of cocoa powder, unsweetened.
07 - 1 1/2 cups flour for all purposes.
08 - 1 cup flour intended for cakes.
09 - 1 teaspoon of cornstarch.
10 - 3/4 teaspoon baking soda.
11 - Half a teaspoon salt.
12 - 1 3/4 cups chocolate chips, semi-sweet.
13 - 2 cups marshmallows, mini-sized.
14 - 3/4 cup cashews, roughly chopped up.

# Instructions:

01 - Set your oven to 410°F. Lay parchment paper on a baking sheet.
02 - Whip the butter with the sugars for about 4 minutes. Stir in eggs and vanilla. Gently combine with the dry mix.
03 - Fold in the marshmallows, cashews, and chocolate chips.
04 - Scoop portions weighing 5-6 ounces each. Optionally, add extra chips and marshmallows on top.
05 - Pop them in the oven for 9-11 minutes. Push edges inward while warm if they spread. Let them cool for 15 minutes before transferring.

# Notes:

01 - Made with a mix of cake flour and regular flour.
02 - Feel free to swap with only all-purpose flour.
03 - Better results with a light-colored baking tray.
