Set your oven to 425°F. Grate the potatoes, then twist them up tight in a kitchen towel to remove the water.

In a bowl, toss the grated potatoes with pepper, salt, onion powder, garlic powder, and oil.

Line a baking sheet, spread your potato mixture, then press it evenly down. Flip once midway and bake for 20-25 minutes till golden and crisp.

Sprinkle the cheddar cheese on top. Let it bake a few more minutes, just enough to melt.

If you're using butter, pour it gently over the top. Then pile on sour cream, bacon bits, chopped onions, chives, and mozzarella if you'd like.
