Honey Spice Pryaniki (Print Version)

# Ingredients:

01 - 1/2 cup hot water.
02 - 1/2 cup instant coffee.
03 - 1 cup sugar.
04 - 1 cup softened butter.
05 - 1-2 teaspoons vanilla.
06 - 1 1/2 cups honey.
07 - 1/4 teaspoon nutmeg, freshly grated.
08 - 1/2 teaspoon anise seed.
09 - 1/2 teaspoon allspice.
10 - 2 large eggs.
11 - 1 teaspoon vinegar.
12 - 1 1/2 teaspoons baking soda.
13 - 1/2 teaspoon baking powder.
14 - 6 cups plain flour.
15 - 1/2 cup milk.
16 - 4 1/2 cups powdered sugar.

# Instructions:

01 - Heat up water and stir in coffee. Once smooth, mix it with sugar, honey, and butter, then slowly simmer until the butter’s melted. Let it cool for about 10 minutes.
02 - Stir the cool mixture with vanilla, nutmeg, anise, and allspice so the flavor spreads evenly.
03 - Beat eggs into the mixture. Add the baking soda and vinegar solution along with the baking powder—it’ll foam up while mixing.
04 - Work in the flour, combining thoroughly until a dough forms. Cover and let it sit for a good 4 hours or overnight.
05 - Roll the dough into balls, around a spoonful each. Bake in a 325°F oven for 20-25 minutes.
06 - Blend milk and powdered sugar into a smooth glaze. Coat cooled cookies by dipping them, then let them sit until dry.

# Notes:

01 - Feel free to add spices like cardamom or cinnamon for variety.
02 - This yields a big batch, making it great for sharing.
03 - Cookies freeze beautifully for months.
