Honey Chipotle Bowls (Print Version)

# Ingredients:

01 - 1 pound chicken breast, cut into chunks.
02 - 2 tablespoons olive oil.
03 - 1/4 cup honey.
04 - 2 tablespoons diced chipotle peppers with adobo sauce.
05 - 2 tablespoons squeezed lime juice.
06 - 2 garlic cloves, finely chopped.
07 - Salt and pepper as needed.
08 - 2 cups prepared rice.
09 - 1 cup black beans, washed and drained.
10 - 1 cup corn.
11 - 1/2 cup cherry tomatoes, cut in half.
12 - 1/4 cup finely diced red onion.
13 - 1 avocado, cut into slices.
14 - 2 tablespoons chopped fresh cilantro.
15 - Lime pieces for serving.

# Instructions:

01 - Warm oil in a large skillet over medium-high heat. Toss in chicken chunks and cook until golden brown, about 5-7 minutes.
02 - Combine honey, diced chipotles, lime juice and chopped garlic. Pour this mix onto the chicken and let it bubble for 3-5 minutes until it gets sticky.
03 - Spoon rice into each bowl. Add layers of beans, corn, tomatoes, diced onion, and avocado slices.
04 - Add the sweet and spicy chicken on top, sprinkle with cilantro, and put lime pieces on the side.

01 - You can make the chicken up to 3 days ahead of time.
02 - Feel free to switch up the toppings however you want.
