Ground Beef Cheesy Soup (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 small onion, chopped finely
02 - 2 cloves of garlic, minced fresh
03 - 1 pound of ground beef, unfrozen
04 - 5 medium potatoes, peeled and diced into small chunks

→ Liquids & Dairy

05 - 1 cup heavy cream
06 - 3 cups of flavorful beef stock
07 - 2 tablespoons of butter, softened
08 - 1 cup cheddar cheese, shredded fresh

→ Seasonings & Garnish

09 - A sprinkle of sea salt and a pinch of freshly cracked black pepper
10 - Chopped fresh chives to top it off

# Instructions:

01 - Chop your potatoes into bite-sized pieces and get them ready while preparing other ingredients.
02 - Use a big cooking pot to melt the butter over medium heat. Toss in the ground beef and cook it until it’s browned nicely, breaking it apart as you go.
03 - Mix in the minced garlic and onions with the cooked meat. Stir it all together until the onion softens and turns translucent, about five minutes.
04 - Pour in beef broth and add the potatoes. Bring it up to a boil, then lower the heat and let it gently bubble until the potatoes are soft, about 20 minutes.
05 - Stir in the cheddar cheese along with the cream. Keep stirring until the cheese melts and you’ve got a creamy soup texture.
06 - Shake some salt and pepper over the soup to fit your taste. Sprinkle some fresh chopped chives on top right before digging in.

01 - Leftovers taste even better! Store in the fridge and enjoy within five days.
02 - You can add a dash of Worcestershire or some smoked paprika for a more complex flavor.
