Shrimp Garlic Grilled Cheese (Print Version)

# Ingredients:

→ Shrimp Prep

01 - 2 cloves garlic, finely chopped
02 - A pound of medium shrimp, cleaned and ready to cook
03 - Salt and black pepper, as you like
04 - 2 big spoonfuls of olive oil

→ Garlic Spread

05 - Four garlic cloves, minced
06 - A quarter teaspoon of table salt
07 - Two spoons of chopped fresh parsley
08 - Half a cup of softened butter

→ Putting It Together

09 - 2 cups of mozzarella cheese
10 - 1 cup shredded cheddar cheese
11 - A few fresh herbs for decoration
12 - 8 slices of sourdough bread

# Instructions:

01 - Toss the shrimp with pepper and salt. Heat up olive oil in the skillet, stir in garlic, then add the shrimp. Cook until they turn pink (that pop of color is exciting!).
02 - Combine the butter, garlic, parsley, and salt in a mixing bowl till it’s smooth.
03 - Coat the outside of your bread slices with the garlic butter (Aliana enjoys this part!).
04 - Lay mozzarella cheese, shrimp, and cheddar cheese on the bread’s inner side.
05 - Use a skillet on medium-low heat. Flip until the bread is crisp on both sides and the cheese oozes.
06 - Let them cool a little before slicing. Garnish with fresh herbs if you’ve got them.

# Notes:

01 - Shrimp cooks best when not overdone
02 - Keep the skillet on medium-low for melty cheese
03 - Georgia says freshly grated cheese melts like a dream
04 - Catrine’s trick: sprinkle garlic powder for extra punch
