Tender Mediterranean Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 1 teaspoon dried parsley
02 - 4 salmon fillets (7 oz each)
03 - ½ teaspoon onion powder
04 - 2 teaspoons garlic powder
05 - ¼ teaspoon pepper
06 - 2 teaspoons dried oregano
07 - 1 lemon, sliced
08 - ½ teaspoon kosher salt
09 - 2 teaspoons dried basil

→ Mediterranean Topping

10 - Salt and pepper to taste
11 - ½ cup cherry tomatoes, diced
12 - 1 tablespoon fresh parsley, chopped
13 - 1 tablespoon fresh mint, chopped
14 - ½ cup kalamata olives
15 - ⅓ cup feta cheese
16 - 1 tablespoon olive oil

# Instructions:

01 - Heat the oven to 400°F (200°C).
02 - Grab a tiny bowl and stir together onion powder, dried basil, garlic powder, dried parsley, dried oregano, kosher salt, and pepper. Keep it on the side for later.
03 - Use a paper towel to gently dry the fillets. Sprinkle about a teaspoon of the mixed seasoning evenly over them.
04 - Put the seasoned salmon into a greased skillet. Spread the lemon slices around the fillets to infuse them with citrusy flavor.
05 - Pop the skillet in the hot oven. Let the salmon bake for 12-15 minutes, or until it hits 145°F (63°C) and flakes when poked with a fork.
06 - As the salmon cooks, take a bowl and combine diced cherry tomatoes, chopped parsley, feta cheese, kalamata olives, fresh mint, some olive oil, and a pinch of salt and pepper. Stir gently!
07 - Drizzle the baked salmon with olive oil and cover the top with the Mediterranean mix. Serve it immediately—feel free to pair it with some couscous or veggies!

01 - For a quicker option, air fry at 400°F (200°C) for around 8-10 minutes.
02 - Leftovers? Store cooked salmon in the fridge—it'll stay good for 3 days.
