Fluffy Cheese Cloud Bread (Print Version)

# Ingredients:

01 - 3 egg yolks and whites, separated.
02 - Smoothly blended 1/2 cup of cottage cheese.
03 - 1/4 teaspoon of tartar powder.
04 - Salt, 1/2 teaspoon.
05 - Cornstarch, if desired, 1 tablespoon.
06 - Honey, 1 teaspoon, optional.

# Instructions:

01 - Set oven to 300°F and get a baking tray ready with parchment. Separate the eggs.
02 - Whisk the egg whites and tartar until stiff peaks appear.
03 - Blend the yolks with cottage cheese, salt, and any extras until smooth and creamy.
04 - Gently combine the whipped whites into the yolk mix in thirds. Don’t deflate the mixture.
05 - Form 6-8 rounds and bake for 25-30 minutes until golden brown. Let cool fully.

# Notes:

01 - Eggs whip better if left out to warm up beforehand.
02 - Pop them in the oven right after mixing.
03 - Overmixing ruins the airy texture, so be careful.
