Set your oven to the temperature recommended on the tater tots package, usually around 425°F (220°C). Lay the frozen tots in a single layer on a baking sheet covered with parchment. Let them bake for about 28 minutes, turning them once to get both sides crispy and golden.

After baking, let the tater tots cool a bit so you can handle them easily. Gently slide 4–6 tater tots onto each skewer, keeping them spaced evenly.

Place the skewered tots back onto a fresh parchment-lined tray. Sprinkle them with shredded cheddar cheese first, then add the finely chopped bacon. Use half the sliced green onions and spread them across the skewers.

Pop the tray back into the oven for 5–7 minutes, or until the cheese is melted and bubbling nicely.

Take the skewers out of the oven and sprinkle the rest of the green onions on top. Serve them warm with a bit of sour cream on the side as a dip, if you'd like.
