Crispy Chicken Garlic Sauce (Print Version)

# Ingredients:

→ For the Chicken

01 - 2 large chicken breasts, sliced in half, or 4 smaller ones
02 - Pepper and salt, as desired
03 - 2 tbsp olive oil

→ For the Garlic Sauce

04 - 3-4 finely chopped garlic cloves
05 - 1 cup either heavy or light cream
06 - 1 tbsp dried oregano or Italian seasoning
07 - Grated parmesan, ½ cup
08 - Chop a cup of spinach (optional)

# Instructions:

01 - Sprinkle both sides of the chicken pieces with salt and pepper. Use a skillet on medium-high heat, adding olive oil. Cook the chicken for roughly 5 to 6 minutes on each side until browned and crispy. Remove and put aside.
02 - Turn the heat to low and toss the garlic into the pan. Stir it for half a minute, then pour in the cream, keeping it moving. Add dried herbs and parmesan, mixing till smooth. Toss in spinach if you'd like, and let it simmer a few minutes.
03 - Add the chicken back to the sauce, covering it well. Let it simmer shortly, then remove from the heat. Serve warm with veggies, mashed potatoes, or pasta.

# Notes:

01 - For a crunchy chicken, coat in a mix of parmesan and panko bread crumbs.
02 - Want some heat? Add chili flakes to the sauce.
03 - Freshly grated parmesan gives richer flavor and better texture.
04 - Freeze chicken and sauce separately for 3 months max. Thaw in the fridge the night before reheating.
