Sprinkle both sides of the chicken pieces with salt and pepper. Use a skillet on medium-high heat, adding olive oil. Cook the chicken for roughly 5 to 6 minutes on each side until browned and crispy. Remove and put aside.

Turn the heat to low and toss the garlic into the pan. Stir it for half a minute, then pour in the cream, keeping it moving. Add dried herbs and parmesan, mixing till smooth. Toss in spinach if you'd like, and let it simmer a few minutes.

Add the chicken back to the sauce, covering it well. Let it simmer shortly, then remove from the heat. Serve warm with veggies, mashed potatoes, or pasta.
