Radiatore Creamy Sauce (Print Version)

# Ingredients:

01 - 10-12 oz of radiatore pasta.
02 - 2 tbsp olive oil.
03 - Half a medium onion, cut into small pieces.
04 - 2 big cloves of garlic, finely chopped.
05 - 2 1/2 tbsp tomato paste.
06 - 1 tsp dried basil.
07 - 1/2 tsp salt.
08 - A pinch of crushed red pepper flakes.
09 - 1 small shot of vodka (optional).
10 - 1 cup of heavy cream.
11 - 3/4 cup of grated Parmesan cheese.

# Instructions:

01 - In salted water, cook the pasta based on the package, about 10-11 minutes.
02 - In hot olive oil, soften the diced onion for 5 minutes. Toss in garlic, tomato paste, and spices.
03 - Pour in vodka, and let it cook for a minute until the alcohol is gone. Stir in the cream, letting it come to a gentle boil.
04 - Mix in Parmesan cheese and toss in the cooked pasta. Use a splash of pasta water to adjust the sauce thickness if needed.

# Notes:

01 - Generously season the pasta water with salt.
02 - Pasta should be cooked firm to the bite.
03 - Save some water from cooking pasta to help with the sauce later.
