Creamy Soup with Sausage (Print Version)

# Ingredients:

01 - 1 pound crumbled Italian sausage.
02 - 1 tablespoon olive oil.
03 - 1 onion, chopped.
04 - 3 cloves garlic, finely chopped.
05 - 4 cups chicken broth.
06 - 1 can (14.5 oz) diced tomatoes.
07 - 2 cups chopped spinach.
08 - 1 cup heavy cream.
09 - 1/2 cup grated Parmesan cheese.
10 - 1 teaspoon Italian seasoning.
11 - 1/2 teaspoon crushed red pepper flakes (if you want heat).
12 - Salt and pepper as needed.

# Instructions:

01 - Pour oil into big pot. Brown the sausage chunks for about 5-7 minutes. Take out and put aside.
02 - Using the same pot, soften the onion and garlic for roughly 2-3 minutes.
03 - Pour in broth, add tomatoes, cooked sausage and spices. Let bubble gently for 10 minutes.
04 - Toss in spinach and let it cook down for 2-3 minutes.
05 - Turn down heat, slowly add cream and Parmesan while stirring until everything's blended nicely.

01 - Try swapping in turkey sausage for fewer calories.
02 - Warm up cream before adding to stop it from separating.
03 - Stays good in fridge for 3-4 days.
