Chocolate Cheese Balls (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1/4 cup protein powder (I went with vanilla, but any flavor works).
02 - 1 1/2 cups almond flour (If you're using regular flour, make sure to heat it first to make it safe to eat uncooked).
03 - 1 tsp pure vanilla extract.
04 - 2 tablespoons maple syrup (I used Lakanto's sugar-free option).
05 - 1 cup of 2% cottage cheese.

→ Coating Ingredients

06 - 1 tsp of coconut oil.
07 - 1 1/2 cups chocolate chips, split into portions (I went for Lily's sugar-free dark chips).

# Instructions:

01 - Use a food processor or blender to whip the cottage cheese until it's smooth and creamy.
02 - Leaving 1 cup of chocolate chips for later, mix the rest of the ingredients together in a medium bowl until it all comes together.
03 - Pop the mix in the fridge and let it sit for about 30 minutes.
04 - Grab a baking sheet lined with parchment. Use a cookie scoop to portion the dough and then roll those scoops into balls.
05 - Arrange the rolled balls onto the lined tray and chill them in the freezer for 20 minutes or so.
06 - Melt the remaining chocolate chips in a microwave-safe bowl, stirring every 15 seconds, until they're fully melted.
07 - Dip each frozen dough ball into the melted chocolate, coat evenly, and then place back on the parchment paper.
08 - Move them to the fridge to help the chocolate firm up.

02 - To keep it low-carb, stick with sugar-free chocolate chips.
