Use a food processor or blender to whip the cottage cheese until it's smooth and creamy.

Leaving 1 cup of chocolate chips for later, mix the rest of the ingredients together in a medium bowl until it all comes together.

Pop the mix in the fridge and let it sit for about 30 minutes.

Grab a baking sheet lined with parchment. Use a cookie scoop to portion the dough and then roll those scoops into balls.

Arrange the rolled balls onto the lined tray and chill them in the freezer for 20 minutes or so.

Melt the remaining chocolate chips in a microwave-safe bowl, stirring every 15 seconds, until they're fully melted.

Dip each frozen dough ball into the melted chocolate, coat evenly, and then place back on the parchment paper.

Move them to the fridge to help the chocolate firm up.
