Cottage Cheese Flatbread (Print Version)

# Ingredients:

→ Main Components

01 - 2 eggs
02 - 1 cup of cottage cheese (drain any extra liquid)

→ Flavors

03 - ½ teaspoon of Italian seasoning (optional, but adds great flavor)
04 - ¼ teaspoon garlic powder (for a little extra taste)

→ Alternative Options

05 - Swap in plant-based cottage cheese if you want this dairy-free
06 - Use thyme or oregano instead of Italian seasoning

# Instructions:

01 - Toss the drained cottage cheese, eggs, garlic powder, and Italian seasoning into a blender. Run it until the mix is smooth, which should take around 30 seconds or so.
02 - Take a baking sheet and cover it with parchment paper. Give it a light spray with non-stick oil so nothing sticks.
03 - Pour the batter onto the baking sheet. Spread it evenly to about ⅜”–½” thickness. Pop it into a 350°F oven and bake for 30 minutes, or until the edges get a golden touch and the center sets.
04 - After baking, take the flatbread out of the oven and leave it on the sheet to cool completely. This makes it firmer and easier to slice or roll.

# Notes:

01 - Be sure to get rid of all extra liquid from the cottage cheese before blending.
02 - For the right texture, keep the thickness between ⅜” and ½” when spreading the batter.
03 - Letting the flatbread cool fully stops it from breaking when slicing or rolling.
