# Ingredients:

→ For the Salad

01 - 4-5 medium-sized carrots (about 500g), peeled and shredded
02 - 2 tablespoons chopped fresh parsley

→ For the Dressing

03 - 2 tablespoons Dijon mustard
04 - 3 tablespoons freshly squeezed lemon juice (or white wine vinegar)
05 - 3 tablespoons extra virgin olive oil
06 - 1 teaspoon honey (optional, for a little sweetness)
07 - Salt and freshly ground black pepper to taste

# Instructions:

01 - Shred the carrots using a box grater or the grating disk in a food processor. Toss them into a big mixing bowl.
02 - Whisk together the Dijon mustard, lemon juice (or vinegar), olive oil, honey if you'd like, and a pinch of salt and pepper in a small bowl. Mix until smooth.
03 - Drizzle the prepared dressing over the shredded carrots and give it a thorough stir to coat evenly. Gently fold in the chopped parsley.
04 - Pop the salad in the fridge for about 10 minutes to let the flavors blend nicely. Serve cold or at room temperature.
