Chicken Cacciatore Cooker (Print Version)

# Ingredients:

01 - Chicken thighs with skin and bones still on.
02 - Sliced red and green peppers.
03 - Thinly sliced onions.
04 - Chopped garlic.
05 - Canned crushed tomatoes (San Marzano works best).
06 - Chicken broth that’s low in sodium.
07 - Oregano, dried.
08 - Basil, dried.
09 - Tomato concentrate.
10 - Red pepper flakes, optional for heat.
11 - Capers for a briny touch.
12 - Fresh parsley leaves.
13 - High-quality olive oil.

# Instructions:

01 - Toss chicken with salt and pepper. Cook in oil for about 4-5 minutes per side until the outside is crispy and brown.
02 - Lay the garlic, peppers, and onions in the bottom of the slow cooker. Put the browned chicken right on top.
03 - Mix together the tomatoes, broth, tomato paste, and spices, then pour the mix over the chicken. Sprinkle in some capers.
04 - Cover with the lid and let it simmer for 6-7 hours on low or 3-4 hours on high, until the chicken is fall-apart tender.
05 - Add chopped parsley for a fresh kick before serving.

02 - Let the chicken soak in some wine overnight for extra flavor.
