Toss chicken with salt and pepper. Cook in oil for about 4-5 minutes per side until the outside is crispy and brown.

Lay the garlic, peppers, and onions in the bottom of the slow cooker. Put the browned chicken right on top.

Mix together the tomatoes, broth, tomato paste, and spices, then pour the mix over the chicken. Sprinkle in some capers.

Cover with the lid and let it simmer for 6-7 hours on low or 3-4 hours on high, until the chicken is fall-apart tender.

Add chopped parsley for a fresh kick before serving.
