Parmesan Steak Bites (Print Version)

# Ingredients:

→ Steak Prep

01 - 4-5 tbsp avocado oil
02 - 2 pounds of steak (sirloin, ribeye, or filet)

→ Creamy Parmesan Topping

03 - 10 minced garlic cloves, split in two portions
04 - 5 tbsp butter, divided
05 - 1.5 cups full-fat cream
06 - 2 diced green onions
07 - 2/3 cup shredded parmesan
08 - 1 tsp chili flakes

→ Creamy Potato Mash

09 - 4 pounds of russet potatoes
10 - 6 tbsp melted salted butter
11 - 1 cup warm half and half
12 - 3/4 cup shredded Monterey Jack cheese
13 - 1 tsp garlic powder
14 - Pepper as needed
15 - 3/4 tsp salt

→ Spicy Seasoning Mix

16 - 1 tbsp onion powder
17 - 1 tsp dried oregano
18 - 2 tbsp smoked paprika
19 - 1 tbsp cayenne powder
20 - 2 tsp garlic powder
21 - 1/2 tsp dried thyme
22 - 1 tsp black pepper
23 - 1 tsp salt

# Instructions:

01 - Slice steak into pieces about 2-3 inches. Coat with avocado oil, then rub on your spicy seasoning. Let it sit for 10-15 minutes to come up to room temp.
02 - Peel and cut up potatoes, then soak them for 10 minutes in cold water. Drain and boil in salted water until soft enough to poke with a fork.
03 - Warm up avocado oil in a big pan over medium-high heat. Cook steak pieces without touching for 2 minutes, flip, then cook another minute. Lower heat and give it 1 more minute.
04 - Melt butter in the pan, toss in the garlic, and let it cook until you can smell it. Add steak back, toss it around, then pull it out and cover lightly with foil.
05 - Use the same pan, add more garlic and butter. Pour in the cream, let it bubble for a few minutes, then stir in the pepper flakes, diced green onions, and parmesan. Mix until smooth and thick.
06 - Drain your boiled potatoes, then mix in the butter, cream, cheeses, and seasonings. Mash everything together until creamy.
07 - Spoon the mashed potatoes onto a plate, place steak pieces on top, and drizzle a good amount of that parmesan sauce over it all.

# Notes:

01 - Go for a high-heat oil to sear the steak better.
02 - Don’t pack the steak tightly in the pan—keep some space.
03 - If you don’t like too much heat, use less cayenne or chili flakes.
