Garlic Chicken Pasta Bites (Print Version)

# Ingredients:

01 - Fresh basil leaves for topping
02 - Salt and black pepper for flavor
03 - 1 cup finely grated Parmesan
04 - 1 cup creamy heavy cream
05 - 2 garlic cloves, chopped small
06 - 4 tablespoons of butter
07 - 8 ounces of pasta (rotini or penne work well)
08 - 1 pound chicken breast, cut into cubes

# Instructions:

01 - Cook the pasta in salty water until it’s tender but firm. Reserve half a cup of the cooking water after draining.
02 - Warm 2 tablespoons of butter, then cook the garlic till you smell it. Stir in the chicken pieces and cook them until golden and at 165°F inside.
03 - Use the same pan to melt the rest of the butter. Stir in the heavy cream and Parmesan, letting it thicken up. Sprinkle some salt and pepper to taste.
04 - Stir the pasta into the sauce and gently toss in the cooked chicken. Add some pasta water if the sauce feels too thick. Finish with basil and extra cheese.

01 - You can swap chicken for tofu or shrimp.
02 - Mix in veggies like mushrooms or spinach if you'd like.
03 - Keep leftovers in the fridge for up to three days.
