Gourmet Blackberry Brie Melt (Print Version)

# Ingredients:

→ Blackberry Spread

01 - 6 tbsp granulated sugar
02 - Pinch of kosher salt
03 - 2 tablespoons of fresh lemon juice
04 - 3 tablespoons balsamic vinegar
05 - 2 cups fresh blackberries

→ Sandwich Components

06 - 8 slices of sourdough bread
07 - Unsalted butter, adjust as needed
08 - 1 tbsp of fresh, chopped thyme leaves
09 - 300 grams of creamy brie, double cream preferred

# Instructions:

01 - Toss blackberries, sugar, vinegar, lemon juice, and a little salt into a saucepan. Heat until boiling, then lower heat. Mash the berries and let it cook for about 7-10 minutes until it’s nice and thick. Cool it down before using.
02 - Slice brie into pieces roughly ½ inch thick.
03 - Place a skillet on medium heat, making sure it’s not too hot so the cheese melts just right.
04 - Spread butter on one side of half the bread slices. Position buttered side facing the skillet, then layer brie and thyme on top.
05 - Coat other bread slices generously with the cooled blackberry mixture. Put these slices, jam side down, on top of the brie.
06 - Butter the exposed bread tops. Carefully flip and cook sandwiches until bread is golden and brie is gooey.
07 - After cooking, let the sandwiches sit for a moment. Use a sharp knife to halve them for easier eating.

# Notes:

01 - The jam sets more as it cools.
02 - A small pan means you’ll need multiple batches.
03 - Avoid high heat so the cheese melts smoothly.
