Toss blackberries, sugar, vinegar, lemon juice, and a little salt into a saucepan. Heat until boiling, then lower heat. Mash the berries and let it cook for about 7-10 minutes until it’s nice and thick. Cool it down before using.

Slice brie into pieces roughly ½ inch thick.

Place a skillet on medium heat, making sure it’s not too hot so the cheese melts just right.

Spread butter on one side of half the bread slices. Position buttered side facing the skillet, then layer brie and thyme on top.

Coat other bread slices generously with the cooled blackberry mixture. Put these slices, jam side down, on top of the brie.

Butter the exposed bread tops. Carefully flip and cook sandwiches until bread is golden and brie is gooey.

After cooking, let the sandwiches sit for a moment. Use a sharp knife to halve them for easier eating.
