Cheesy Beef Tortellini (Print Version)

# Ingredients:

→ Pasta and Protein

01 - 1 pound ground beef
02 - 9 ounces cheese tortellini

→ Vegetables and Aromatics

03 - 2 cloves garlic, finely chopped
04 - 1 small onion, diced

→ Seasonings

05 - ½ teaspoon ground black pepper
06 - 1 tablespoon chili powder
07 - ½ teaspoon salt
08 - 1 teaspoon ground cumin
09 - 1 teaspoon smoked paprika

→ Sauce and Cheese

10 - 1 cup grated cheddar cheese
11 - 1 (10-ounce) can red or green enchilada sauce
12 - ¼ cup sour cream
13 - 1 cup shredded mozzarella cheese

→ Garnish

14 - Chopped fresh cilantro

# Instructions:

01 - Boil tortellini as the package says, then drain and put aside.
02 - Warm up a big pan on medium heat and cook the ground beef. Break it into small pieces while it cooks. Get rid of the extra fat.
03 - Toss the garlic and onion into the beef. Stir for 2-3 minutes until the onion turns soft.
04 - Mix in the salt, pepper, chili powder, cumin, and paprika. Keep stirring for about a minute to release the spices' aroma.
05 - Pour in the enchilada sauce, let it simmer for around 5 minutes to soak up the flavors. Add the cooked tortellini and give it a good mix.
06 - Sprinkle mozzarella and cheddar across the top. Cover the pan and lower the heat. Wait 2-3 minutes until it melts completely.
07 - Take it off the heat, stir the sour cream in, and finish with a handful of cilantro. Serve warm.
