Boil tortellini as the package says, then drain and put aside.

Warm up a big pan on medium heat and cook the ground beef. Break it into small pieces while it cooks. Get rid of the extra fat.

Toss the garlic and onion into the beef. Stir for 2-3 minutes until the onion turns soft.

Mix in the salt, pepper, chili powder, cumin, and paprika. Keep stirring for about a minute to release the spices' aroma.

Pour in the enchilada sauce, let it simmer for around 5 minutes to soak up the flavors. Add the cooked tortellini and give it a good mix.

Sprinkle mozzarella and cheddar across the top. Cover the pan and lower the heat. Wait 2-3 minutes until it melts completely.

Take it off the heat, stir the sour cream in, and finish with a handful of cilantro. Serve warm.
