Rub taco seasoning, salt, and pepper on both sides of the steak. Add a lime drizzle over it. Let it rest for 10-15 minutes after patting dry.

Warm a pan on medium-high. Cook the steak for 3–4 minutes on each side till your preferred doneness. Let it rest for 5 minutes, then cut thin slices the opposite way of the grain.

Stir together cheddar, mayo, sour cream, and lime juice in a bowl. Keep mixing to make it smooth.

In a hot dry pan, warm each tortilla for about 30 seconds on both sides until they’re soft.

Add beef slices to the middle of each tortilla. Pour a bit of the cheesy sauce and toss cilantro on top.
