Cheesy Beef Street Tacos (Print Version)

# Ingredients:

→ Beef Prep

01 - 1 tbsp lime juice
02 - 1 lb skirt or flank steak
03 - A pinch of salt and pepper, adjust to taste
04 - 1 tbsp taco seasoning mix

→ Cheesy Sauce

05 - 1 tbsp lime juice
06 - 1/2 cup grated cheddar cheese
07 - 2 tbsp mayo
08 - 1/4 cup sour cream

→ Taco Build

09 - A handful of chopped fresh cilantro (1/4 cup)
10 - 4 small soft flour tortillas

# Instructions:

01 - Rub taco seasoning, salt, and pepper on both sides of the steak. Add a lime drizzle over it. Let it rest for 10-15 minutes after patting dry.
02 - Warm a pan on medium-high. Cook the steak for 3–4 minutes on each side till your preferred doneness. Let it rest for 5 minutes, then cut thin slices the opposite way of the grain.
03 - Stir together cheddar, mayo, sour cream, and lime juice in a bowl. Keep mixing to make it smooth.
04 - In a hot dry pan, warm each tortilla for about 30 seconds on both sides until they’re soft.
05 - Add beef slices to the middle of each tortilla. Pour a bit of the cheesy sauce and toss cilantro on top.

# Notes:

01 - Cut the steak opposite to the direction of the muscle fibers to make it extra tender.
02 - Use high heat to get a golden crust on the steak.
03 - Swap cheddar for Mexican-style cheese to pack more flavor.
