Preheat a big skillet over medium heat. Toss in the ground beef and cook, breaking it apart as it browns. Once it’s browned, mix in the chopped onion and cook for another 2–3 minutes to soften. Drain off any extra grease from the pan.

Sprinkle cumin, chili powder, garlic powder, salt, and pepper over the beef. Stir well to coat everything so the meat gets packed with flavor.

Set the tortillas flat on your work surface. Add a scoop of the spiced beef right to the middle. Toss on a handful of both shredded mozzarella and cheddar over the beef.

Take the edges of the tortilla and fold them inward to cover the filling. Start rolling up from the bottom tightly until everything is enclosed. Do the same with the leftover tortillas.

Warm up a non-stick skillet on medium heat. Place the rolled wraps in the pan with the seam side down. Let them cook for 2–3 minutes on each side, flipping them gently, until the tortillas turn golden and crunchy, with the cheese melting inside.

Grab the wraps from the skillet, place them on a plate, and add cilantro, salsa, sour cream, or guacamole for that extra kick if you’re into it. Best enjoyed warm!
