Salmon Bites with Bang Bang (Print Version)

# Ingredients:

01 - 1 lb salmon, diced into chunks.
02 - 1 cup panko crumbs.
03 - 1/4 cup cornstarch.
04 - 2 eggs, whisked.
05 - 1/2 cup mayo.
06 - 2 tablespoons sweet chili sauce.
07 - 1 tablespoon sriracha.
08 - 1 teaspoon honey.
09 - Salt and pepper as needed.

# Instructions:

01 - Warm oven to 400°F. Sprinkle salt and pepper on salmon chunks.
02 - Roll salmon in cornstarch, dip in egg, then coat with panko.
03 - Pop in oven for 12-15 minutes until crunchy and golden. Or deep fry till crisp.
04 - Stir together mayo, sweet chili sauce, sriracha, and honey.
05 - Coat the crunchy salmon with sauce and eat while hot.

# Notes:

01 - Add more or less sriracha depending on how spicy you want it.
02 - Goes great alongside rice or fresh veggies.
03 - If you're frying, make sure your oil is plenty hot.
