Avocado Chicken Melt (Print Version)

# Ingredients:

01 - 2 chicken breasts, no bones or skin
02 - Pepper and salt, add to your liking
03 - 1 tablespoon of oil (olive)
04 - 1 avocado, cut into slices
05 - 4 cheese slices (cheddar, Swiss, provolone, or pick your favorite)
06 - 4 bread slices (sourdough, ciabatta, or whatever you like)
07 - 2 tablespoons of mayo
08 - 1 tablespoon of Dijon-style mustard
09 - 1 small red onion, finely sliced
10 - 1 ripe tomato, thinly sliced
11 - Butter or oil to cook on the stovetop

# Instructions:

01 - Sprinkle chicken with salt and pepper. Heat oil in a pan over medium heat. Cook each side for 6-7 minutes until done, then set aside to cool and slice thinly after.
02 - Cut up cheese and avocado into slices, then place off to the side for later.
03 - Evenly spread a little mayo and Dijon mustard on the bread slices.
04 - On half of the bread slices, pile on chicken, avocado, cheese, onion slices, and tomato. Cover it with the other slices of bread with the mayo side touching the filling.
05 - Heat up a pan over medium using butter or oil. Grill sandwiches 3-4 minutes per side till golden and gooey, pressing gently with a spatula while cooking.
06 - Take off the heat, let sit for a little, cut in half, and serve warm.

# Notes:

01 - Pre-cooked or rotisserie chicken works well too
02 - Keep leftovers fresh in a sealed container
03 - For crispy texture, reheat in a toaster oven
