Sweet Spicy Meatballs (Print Version)

# Ingredients:

→ Meatballs

01 - 1 lb. ground beef
02 - 1 lb. ground pork
03 - 2 large eggs, beaten gently
04 - 3 garlic cloves, finely chopped
05 - 1/4 cup onion, finely shredded
06 - 1/4 cup Panko crumbs, plain
07 - 1/4 cup cilantro, freshly chopped
08 - Salt and pepper to taste

→ Sauce

09 - 1/2 tsp. red pepper flakes
10 - 3/4 cup brown sugar, tightly packed
11 - 1/2 cup soy sauce, reduced-sodium
12 - 1/2 cup ketchup
13 - 1/4 cup honey
14 - 2 Tbsp. vinegar (white wine variety)
15 - 3 garlic cloves, chopped finely
16 - 1 tsp. black pepper, ground
17 - 1 tsp. kosher salt
18 - 1 Tbsp. sesame seeds
19 - 2 Tbsp. sliced green onions

# Instructions:

01 - Lay down parchment paper on a large pan and keep it nearby.
02 - Toss all the meatball ingredients together in a big mixing bowl. Add salt and pepper to your liking.
03 - Roll into 1½-inch rounds (about 35 total) and arrange in a single layer on the prepared pan. If you prefer smaller, go for 1-inch rounds (makes about 50).
04 - Shift oven rack to the upper area and broil meatballs for 6-7 minutes, flipping once. The surface should brown, but the inside can still be a bit undercooked.
05 - Combine the sauce components in a bowl, leaving out the green onions and sesame seeds for later.
06 - Move the cooked meatballs into the crockpot. Pour the sauce over them and stir gently to cover completely.
07 - Set the crockpot to low and let it cook for 3 hours, stirring it once halfway through.
08 - Top everything with sesame seeds and green onions before digging in.

# Notes:

01 - Use a grater's large holes for shredding the onion.
02 - You can prep this in advance and store the parts separately.
03 - For less spice, cut red pepper flakes to 1/4 tsp.
