                Toss the drained cottage cheese, eggs, garlic powder, and Italian seasoning into a blender. Run it until the mix is smooth, which should take around 30 seconds or so.

                Take a baking sheet and cover it with parchment paper. Give it a light spray with non-stick oil so nothing sticks.

                Pour the batter onto the baking sheet. Spread it evenly to about ⅜”–½” thickness. Pop it into a 350°F oven and bake for 30 minutes, or until the edges get a golden touch and the center sets.

                After baking, take the flatbread out of the oven and leave it on the sheet to cool completely. This makes it firmer and easier to slice or roll.
